Nut-Free Paleo Apple Cinnamon Muffins

Below is the recipe I used for these delicious muffins.


4 large eggs

1 cup organic unsweetened apple sauce

1/4 cup honey

2 tablespoons brain octane oil

2 teaspoons pure vanilla extract

1 tablespoon ground cinnamon

1 teaspoon pumpkin pie spice

1 teaspoon allspice

1/2 teaspoon sea salt

3/4 cup tiger nut flour

3/4 cup cassava flour

1 teaspoon baking soda

1 apple, cored and diced small

1/2 cup to a full cup of raw cacao nibs


This recipe was based off of the recipe at www.theendlessmeal.com/paleo-apple-cinnamon-muffins. My daughter is allergic to nuts and I needed to find replacements for the almond flour and the walnuts. In addition, I used the cacao nibs to cut the carb amount since the tiger nut and cassava flours have twice the amount of carbs as the almond flour. They were still too sweet in my opinion, but would be great for a healthier special occasion or Paleo compliant treat. I am going to try it without the honey next time and will try substituting some coconut flour the next time I make these. If you don't need to stay away from nuts, I would recommend trying the recipe in the link I provided and experimenting with my version or a variation of both. Above all else, make sure to have fun while you are experimenting in the kitchen! :)
